At our restaurant, located in the historic center of Florence, just minutes from the Duomo and the Central Market, our pizza is made with long-aged dough, select flours, and baked in a wood-fired oven, following a philosophy that emphasizes flavor, balance, and digestibility.


Our organic pizza is the result of a process that requires time and care. The dough matures for 72 hours, resulting in a light, fragrant, and more easily digestible texture. The choice of organic flours and ingredients also helps enhance the pizza's aromatic profile, resulting in cleaner, more authentic flavors.
